Best Salad Ever at EATALY in NYC. Grilled veggies with a faro, radicchio, watercress salad in a Nebbiolo wine vinaigrette made with olive oil. Total perfection.

Seasonal Quinoa Salad:
Massage baby spinach lemon. In a side bowl mix cooked quinoa with bell peppers, red and green, peas, and salt, black pepper, olive oil, and optional hot pepper flakes and oregano. &ldquoDress&rdquo the spinach with the quinoa salad.
Perfect for summer, fall, winter & spring!

HEALTHY GLUTEN RECIPE - Vegan Garlic Bread:
I eat gluten in the form of whole, good quality bread and pasta when I feel like it, but not as the base of my diet. And when I eat it, it must be in its most natural form of bread and pasta, as opposed to a processed product or soy sauce. Today I just needed bread- it was cold, I had buckets of veggies in soup and salads earlier, I was tired and was craving garlic. Here is what I made in 30 secs:
-two slices truly whole grain bread that has no additives. Just the ingredients the Romans put in their bread
-covered them in virgin olive oil - great source of omegas
-topped with 6 cloves chopped garlic - great for your immune system
-put in toaster oven until garlic was browned
Totally hits the spot without being ‘bad’ for you.

Fall salad. White asparagus (or normal if you cannot find white), tomatoes, lettuce & oregano. Red wine vinegar & olive oil to taste.
