    Perfect day for Amatraciana, a classic Roman dish I&rsquove added a #RETOX touch to:

    -Add olive oil to a hot skillet and then 5 slices of medium thickness pancetta (aka ham or bacon) chopped into small pieces with most of the fat cut off and tossed away. Yes, it will be ok. If you have non ham eaters like me, make the chunks big enough that they can be picked out or around later.
    -When the ham is cooked, add a drizzle more of olive oil, two cloves of garlic diced and one large white onion diced. Stir.
    -When the onion is translucent and soft add one large jar of Passata, or tomato purée. My favorite brand is @muttipomodorousa .
    -Add salt, black pepper and 1-2 hot peperoncinos to taste.
    -Stir & let cook on medium heat while you boil the water (with salt) for the pasta.
    -Cook your face pasta (I recommend bucatini or rigatoni for this sauce) al dente.
    -When done, add the pasta & 1/3 cup of the pasta water to the sauce & stir.
    -Serve with fresh grated Parmesan & maybe some red wine.

    Its Monday. You want pasta but you want To be &ldquohealthy.&rdquo You don&rsquot want to cook but you want a homemade meal - enter my #RETOX PESTO AL CALIFORNIANO ! This is a take on a famed Italian northern pasta dish but takes out the potatoes and needless fillers and uses my Pesto recipe which is full of omegas, protein and taste without all the oil.

    1. Add two cloves of garlic and ½ a white onion to a pan with olive oil. Let simmer until soft.
    2. When onion is translucent add a cup of baby tomatoes cut in half and a dash of salt. Stir and let simmer on medium.
    3. Now add 3 large zucchinis cut in thin rings. Stir, add drizzle more of olive oil and dash of salt, and let cook.
    4. While the zucchini &ldquopasta&rdquo is cooking make the pesto! Recipe is the last post on the blog and uses two awesome secrets to make a much healthier and easily digest ale version of this famed Italian sauce.
    5. When zucchini is soft, mix it in a bowl with the pesto. Optionally sprinkle with Parmesan and fresh basil and enjoy!

    the #RETOX Lasagna:

    This lasagna is light & protein packed. The sauce, recipe below, is 80% vegetables, and I use 2 different types of cheeses instead of ricotta, bechemel and maozzarella so you can enjoy an epic lasagna without feeling heavy after.

    -Make my #RETOX Beef Ragu Sauce 
    -Take a Pyrex Oven pan and layer a thin layer of sauce on the bottom.
    -Add a layer of No-Cook Lasagna Pasta Sheets
    -Add a layer of sauce
    -Add a layer of grated parmesean and pecorino cheese
    -Add another layer of No-Cook Lasagna Pasta Sheets
    -Repeat until the top of the pan
    -‘Close’ the lasanga with a layer of sauce and AMPLE grated parmeasean and pecorino.
    -Bake in oven at 425 until the top layer is melted and crunchy
    -Let sit for 20 minutes
    -Serve and enjoy!
