Thai Quinoa Thai:
-Sautée one yellow onion, 3 cloves of garlic and 2 Thai spicy red peppers (optional) in a pan with olive oil or sesame oil.
-Add a Container of chopped baby tomatoes
-Add one chopped zucchini and one chopped red bell pepper
-After a few minutes add one chopped zucchini. Once soft add two cups of snap peas.
-When soft add 2 cups of cooked quinoa, stir and cover with a lid.
Serve alone or top with an avocado and sesame seeds. Enjoy!

So simple easy & yummy!
Sautéed a small yellow onion in olive oil. When translucent add a diced sweet or spicy red pepper. When soft add a handful of spinach. Stir on medium to medium low heat. Pour in an egg mixture of 4 whole eggs + 2 egg whites. Salt lightly and pepper to taste. Cover with a lid and let cook on low medium heat for 5 minutes. Flip and repeat on other side until cooked til liking. Serve hot or cold for any meal or snack Spanish #RETOX style.

A little Asian Broccoli salad #RETOX style - Cooked broccoli, cucumber, red onion, olive oil, rice wine vinegar & chopsticks. If I had had ginger, I would have grated some in there, too.

Middle Eastern Quinoa Sautee:
Fry or scramble two organic eggs. Leave to side in a warm pan, microwave, oven or another sealed place so they stay warm. I like to sunny side up them well done to get a cool white / yoke mix.
In a large Sautee with olive oil add 1-2 sliced bell peppers & white onion. When soft add ½ a diced carrot, ¼ cup corn, ½ cup red cabbage. When all soft, add a cup of cooked red or white quinoa. Add 2 tablespoons of sumac, my fave middle eastern spice, and optionally also 1 teaspoon of ground chili. Stir together well and cover with a lid.
