    Gold Medal Guac: This recipe is lighter than most guacamole, perfect for an Olympic watching spree. Use the following: 1.5-2 haas avocados, ½ bunch cilantro finely chopped, 1 jalapeño, 1 small red onion, optional hot red pepper, 6 baby tomatoes diced, dash of salt, optional squeeze of lime or lemon.     Perfect day for Amatraciana, a classic Roman dish I&rsquove added a #RETOX touch to:

    -Add olive oil to a hot skillet and then 5 slices of medium thickness pancetta (aka ham or bacon) chopped into small pieces with most of the fat cut off and tossed away. Yes, it will be ok. If you have non ham eaters like me, make the chunks big enough that they can be picked out or around later.
    -When the ham is cooked, add a drizzle more of olive oil, two cloves of garlic diced and one large white onion diced. Stir.
    -When the onion is translucent and soft add one large jar of Passata, or tomato purée. My favorite brand is @muttipomodorousa .
    -Add salt, black pepper and 1-2 hot peperoncinos to taste.
    -Stir & let cook on medium heat while you boil the water (with salt) for the pasta.
    -Cook your face pasta (I recommend bucatini or rigatoni for this sauce) al dente.
    -When done, add the pasta & 1/3 cup of the pasta water to the sauce & stir.
    -Serve with fresh grated Parmesan & maybe some red wine.
